All of my gluten-free primi piatti recipes. Primi piatti consist of rice, pasta, & gnocchi dishes, and polenta when used as the main ingredient. In a full-course meal, primi are served after antipasti (appetisers) and before the secondi (which consists of meat or fish). All of these recipes, unless otherwise stated, are designed to be substantial enough to be served as main courses – if you wish to serve them as starters, simply reduce the quantities per person.
