This dish is perfect for a simple brunch or lunch. I have used red peppers because they are what I had to hand, but you could use yellow or orange peppers, too. Avoid green peppers as they are far too bitter. The cheeses I’ve used are parmesan and pecorino as I love combining the two when I can and I always have a wedge of each in the fridge, but you could get away with using any hard cheese, such as cheddar or Emmenthal. Rather than grilling the omelette at the end, you could flip it upside down onto a plate and slide it back into the frying pan to finish cooking. However, placing the omelette under a hot grill helps it to puff up. The omelette by itself is sufficient for a hearty breakfast or brunch; for lunch, serve with a side salad.

  • 3 tbsp extra virgin olive oil
  • 3 red peppers (or yellow or orange)
  • 40 g butter
  • 8 medium eggs
  • 25 g parmigiano reggiano (grated)
  • 25 g pecorino cheese (grated)

  • 3 tbsp extra virgin olive oil

Instructions
  1. Heat the olive oil in a frying pan and add the peppers. Fry over a medium heat, stirring occasionally, until the peppers have started to caramelise at the edges (this should take about 10 minutes).
  2. Beat the eggs in a large bowl, season with salt and pepper, and mix in the grated cheeses.
  3. Add the butter to the pan and let it melt. This will add an extra richness to the eggs.
  4. Pour in the egg mixture and leave to cook over a medium heat, without stirring, for about 5 minutes or until the underside has browned. In the meantime, pre-heat a grill.
  5. Place the frying pan under a hot grill and continue cooking until the top has begun to brown. This shouldn't take longer than a minute or two.
  6. Serve hot straightaway or leave to cool for a picnic.
